
Why Your Bread’s Color Depends on the Right Heat
In a professional bakery, a single degree can be the difference between a perfect golden-brown crust and something that looks… well, unfinished. It all comes down to the Maillard reaction. If your temperature is off, your crust color shifts and your moisture levels tank. That’s why we use rapid-heating lamps in our rotary ovens. Traditional convection can be sluggish. These lamps, on the other hand, hit those exact temperature marks without the annoying lag. Getting the heat where it needs to go These lamps use shortwave infrared radiation. Now, instead of relying on hot air to slowly drift around the dough, infrared goes straight into the surface. We use high-wattage tubes because we want the oven to bounce back instantly. You know that “temperature dip” that happens the second you swing the oven doors open? That’s what kills your crumb structure and leaves you with pale bread. These lamps stop that from happening. The secret is in the quartz We build these things with high-purity quartz glass. It has to be, because the thermal shock of cycling the heat on and off is brutal. For the really picky stuff—like high-end pastries—we pair these lamps with PID controllers. Because the filament doesn’t hold onto a ton of heat, we can cut the power and the radiant heat drops almost immediately. It’s a huge relief. You don’t have to worry about those heavy heating elements staying hot and over-baking your batch after you’ve already hit the “off” switch. The practical side of things On the floor, nobody has time to mess around with complex wiring. That’s why most of our lamps use R7s or Sk15 connectors. If a tube burns out, you just pull it and drop in a new one. Simple. But here’s a heads-up: these high-density lamps are power-hungry. If you’re running 2000W+ tubes across several banks, make sure your wiring gauge can actually handle the peak current. If the wiring is too thin, you’ll get voltage drops. And if that happens? Your lamps won’t hit the target temperature, no matter how much you tweak the controller.
