
Cutting Your Pizza Bake Time with 300W Infrared
Most convection ovens just blow hot air around. It works, but it’s slow. We decided to throw 300W infrared lamps into the mix to add some direct radiant energy. The result? We knocked the bake time down from five minutes to about 90 seconds. That’s a massive difference when you’re in the middle of a rush.
How the heat actually works
Here is the secret: those IR lamps aren’t trying to heat up the air in the oven. Instead, they go straight for the water and fats in your dough and toppings. While the fans keep the general temperature steady, the lamps hit the pizza with a burst of short-wave radiation. It sinks into the surface way faster than air ever could. You get that perfect brown crust and bubbly cheese, but the center stays juicy instead of drying out.
Getting it installed
We use high-purity quartz glass for these lamps because they have to handle the shock of turning on and off rapidly. We settled on 300W because it’s the “sweet spot”—enough punch to speed things up, but not so much that you’re scorching the toppings. Most of the time, these just drop right into your existing heating arrays. You’ll wire them into your current control board, but just double-check that your relays can handle the fast switching. You want that temperature control to be spot on.
A few things to watch out for
Adding these lamps does make the oven chassis run hotter. If you cram too many of them into a tiny space, the outside of the machine is going to feel it. Make sure your ventilation is up to scratch so you don’t accidentally cook your own electronics. The upside is obvious: you can push way more pies through the line every hour. It turns your biggest bottleneck into your biggest advantage. Just one tip:**keep the quartz tubes clean.**If grease builds up on the glass, the heat can’t get through, and you’ll end up burning out the tube way sooner than you should.
