Those stubborn cold spots are a nightmare when you’re trying to keep your quality consistent. We’ve found a better way to handle this. Instead of just hoping the convection heat reaches every corner, we add independent quartz infrared lamps to every single layer. Giving every deck its own voice Here’s the thing: relying on one big heat source to warm up a massive oven cavity is a slog. It takes forever. By using quartz lamps, we basically create separate heat zones. Each deck gets its own set of lamps and its own PID controller. This means you can crank the heat on the top rack without accidentally scorching the bottom. Since infrared energy hits the food directly—rather than waiting for the air to warm up first—the response is almost instant. No more waiting around for the oven to “catch up” when you make a temp adjustment mid-bake. Why quartz? We use high-purity quartz glass because it can take a beating. It handles extreme temperature swings without cracking. The second that relay clicks, you have heat. It’s fast. Really fast. But a quick heads-up on the install: quartz is picky. If your team touches the tubes with bare hands, the oils from their skin can create hotspots. That’s a shortcut to a burnt-out lamp. Tell them to use gloves or a quick alcohol wipe during the swap. It saves a lot of headaches later. The trade-offs Adding these lamps pretty much kills the “cold spot” problem, but it does come with a few catches. First, these lamps pull a decent amount of power. You’ll need to double-check that your wiring and contactors can handle the extra amperage. You don’t want to be dealing with melted terminals in the middle of a rush. Also, keep an eye on your wattage. If you push it too hard to speed up your bake, you might end up with a beautiful brown crust and a raw center. It’s all about finding that sweet spot between the lamp power and how fast your trays are moving.
