Ever notice how a standard oven just… dips? You slide a cold pizza in, and the temperature tanks. Then you’re stuck waiting for the oven to fight its way back up to heat. It’s a pain, especially when you’ve got a line of hungry people out the door. To fix this, we stopped relying on old-school resistive heating and switched to short-wave infrared quartz elements. These things are fast. Like, “300°C in a few seconds” fast. Instead of wasting time heating up all the air in the chamber, the energy goes straight into the pizza.
The secret to the speed
It really comes down to the materials. We use tungsten filaments inside quartz tubes. Unlike heavy steel or cast-iron elements that act like big heat sponges—soaking up energy before they actually give it off—these quartz tubes don’t store heat. They just emit it. The moment you flip the switch, the energy moves. It’s nearly instant. That’s how a kitchen can keep a steady 300°C floor even when the dinner rush hits its peak.
What’s under the hood
We use high-purity quartz glass for the tubes. It keeps the filament from oxidizing and lets those infrared waves fly right through without getting blocked. But here’s the clever part: we often add a special coating to the glass. This tweaks the heat just enough so it sinks deep into the dough without torching the cheese before the crust is actually done. And for the boring but important stuff? We use standard R7s or SK15 connectors. If a tube ever goes, you just pop it out and drop a new one in. No need for a full-day teardown.
A few things to watch out for
Now, all that power comes with a catch. Because these elements ramp up so aggressively, they put a lot of stress on the connection points. You’ve got to make sure your wiring and sockets can actually handle the wattage. If you cheap out on the wires, you’re looking at melted terminals. Also, give the oven some room to breathe. If the ventilation is clogged, the ambient heat builds up and kills the filament faster. Keep the airflow clear, and your tubes will last much longer.
