
Getting Your Ruby Steam Oven Heaters to Behave
If you’re running an automated kitchen, you probably already know that ruby infrared heaters are beasts. They don’t just warm things up; they hit food surfaces with high-intensity heat that sinks in fast. But here’s the tricky part: they’re too fast. If you aren’t careful, your temperature will rocket past your target before your system even realizes what happened. Making the hardware play nice To get these heaters working with your PLC, we usually go with high-frequency PWM via Solid State Relays (SSRs). Since ruby heaters react almost the second you change the power, you can’t just flip them on and off. You’ll end up with burnt food or a dead lamp. That’s why we lean on PID loops. It’s a balancing act. If you tune it too aggressively, your temperature will bounce around like crazy. Too slow? And you’ve just wasted the whole point of using infrared in the first place. The heat density trade-off The ruby coating on these quartz tubes is a lifesaver because it lets them run much hotter than clear quartz. You can cram a lot of wattage into a tiny space. But there’s a catch. All that heat puts a massive amount of stress on the ends of the lamps. If you use the wrong mounting brackets, the tubes will crack as they expand and contract. Stick to low-expansion alloys. Your future self will thank you. Keeping things running (and clean) We’ve designed these for quick swap-outs. No one wants to rewire a whole cabinet just to replace one lamp, so we use standardized connectors to keep it simple. Just a heads-up: make sure your power supply can handle that initial jolt of inrush current when they kick on. One last thing—and this is where most people trip up—grease and steam are the enemies here. If a film of grime builds up on the tube, the infrared output drops. Your control system will see the temp dipping and keep cranking the power to compensate. It might still hit the target temperature, but you’re essentially cooking the lamp from the inside out, which kills its lifespan. Get a cleaning schedule on the calendar or throw a protective shield over them. It’s a small step that saves a lot of money.
